Riedel Restaurant Bar — Drink Specific Rocks Tumbler

The Riedel Restaurant Bar Drink Specific Rocks Tumbler (0417/02) is the classic short build glass in the Drink Specific collection. At 283ml with near-square proportions, 83mm tall and 82mm wide, it is compact, stable, and designed to sit comfortably in the hand for the duration of a drink: the correct format for an Old Fashioned, a Negroni, a Boulevardier, or any spirit-forward short build served over one large-format ice block.

The near-square shape is deliberate rather than incidental. A glass that is almost as wide as it is tall fills the palm when held rather than sitting high in the fingers like a taller tumbler, which suits the unhurried, considered pace at which spirit-forward cocktails are meant to be drunk. It is a substantial feel for a substantial drink. The 82mm opening is wide enough to accommodate both standard commercial ice cubes and a single large-format cube or sphere, and the integrated oar near the base marks a precise 60ml fill line without requiring a jigger. Like every glass in the Drink Specific range, it was co-designed with mixologist Zane Harris and based on the traditional serves for 7 cocktail classics. Machine-made in lead-free crystal, certified for 1,500 commercial dishwasher cycles, sold in sets of 12 for professional bar and restaurant use.

Key features of the Riedel Drink Specific Rocks Tumbler:

  • Near-square proportions for hand-filling comfort: At 83mm tall and 82mm wide, the Rocks Tumbler fills the palm when held, providing the substantial, grounded feel suited to spirit-forward cocktails drunk slowly and with attention
  • Designed for one large-format ice block: The 82mm opening is calibrated to accommodate a single large-format cube or sphere precisely, so the ice sits in the glass rather than floating or sitting awkwardly above the rim
  • Integrated 60ml oar fill line: The thicker oar moulded near the base marks an exact 60ml pour without a jigger, streamlining the build and ensuring consistent measures across every glass in the set
  • 283ml compact single-build capacity: Sized for a 60ml spirit base with one large ice block, producing a correctly proportioned single build that reads as precise and well-made rather than sparse or oversized
  • Low stable profile: The squat near-square form is one of the most stable glasses in the Drink Specific range, with a low centre of gravity that resists tip-over on the bar surface and during service
  • Old Fashioned family and neat spirit service: The correct glass for Old Fashioned in all variations, Negroni, Boulevardier, Mezcal Negroni, White Negroni, and premium neat spirit service with a single large ice block
  • Zane Harris collaboration: Part of the Drink Specific collection developed with the mixologist behind Dutch Kills, Maison Premiere, and Rob Roy
  • 1,500-cycle dishwasher certification: EN 12875-1/2 certified for sustained commercial bar service
  • Set of 12, trade-only: Bar-format case quantity for professional operations

This glass is the foundation of any serious cocktail programme: the Old Fashioned format done correctly. It works alongside the Double Rocks for operations that serve both single and double builds, and within the full Drink Specific range to cover short, long, and stirred cocktail service from a single coherent collection.

What Bar and Restaurant Professionals Ask About This Glass

Do we need both the Rocks and the Double Rocks, or will one cover everything?

It depends on your build sizes. The Rocks (283ml) is the correct glass for a single 60ml spirit build over one large ice block: compact, hand-filling, precise. The Double Rocks (370ml) provides the additional volume for a full double measure with modifiers and large ice, where the Rocks would look cramped at the same pour. If your Old Fashioned programme exclusively uses double measures, the Double Rocks is the one to stock. If you serve single-measure spirit-forward builds, or if you want the classic compact Old Fashioned format for neat spirit service alongside a larger double-build glass, stocking both shapes makes sense. Many serious cocktail programmes use the Rocks as the neat spirit and single-build glass and the Double Rocks as the house cocktail rocks format.

What size large-format ice fits the 82mm opening?

The 82mm opening accommodates standard commercial large-format cubes up to approximately 5x5cm (50mm), which is the most common large cube size in UK bar operations. The glass is specifically described by Riedel as designed to accommodate one large-format ice block, meaning the cube sits in the glass correctly rather than perching above the rim or rattling in an oversized opening. Larger 6cm cubes will sit higher in the glass, which is not incorrect but changes the proportion of the drink. Spheres of 5-6cm diameter fit comfortably. For operations cutting their own large ice, a 50mm cube is the optimum for this glass.

Is this glass suitable for a Negroni as well as an Old Fashioned?

Yes. The Negroni is a stirred spirit-and-modifier build served over ice, structurally similar to the Old Fashioned in its glass requirements: a compact rocks format, one large ice block, generous opening for the orange peel garnish. The 283ml capacity suits a standard Negroni at 30ml gin, 30ml Campari, and 30ml sweet vermouth, which yields approximately 90ml before ice, filling the glass to around 32% capacity before the large cube goes in. That leaves the drink at a correct level once the ice is placed. The same logic applies to the Boulevardier, Mezcal Negroni, and White Negroni.

How does the oar fill line work in a single-build Old Fashioned?

For an Old Fashioned built directly in the glass, the recommended sequence is: sugar and bitters first, then spirit poured to the oar mark (60ml), then the large ice block. The oar mark establishes the spirit measure at the start of the build before anything else goes in, so the bartender and the customer both have a clear reference point. The large ice block, once placed, raises the liquid level and brings the drink to its correct final appearance. For a Negroni where all three components are combined before the ice, pour the combined 90ml to the oar mark and add ice, adjusting the pour to suit the equal-parts build.

How many dishwasher cycles are these glasses certified for?

The Drink Specific Rocks Tumbler is certified to EN 12875-1/2 standards for 1,500 commercial dishwasher cycles with no visible deterioration, corresponding to 10+ years of normal bar or restaurant service life.

The Old Fashioned Glass: Proportion, Ice, and the Art of Doing Less

The Old Fashioned is the cocktail that most rewards getting the fundamentals right. Whiskey, sugar, bitters, ice: four elements, no hiding place. The glass it is served in is as much a part of the experience as any of them. An Old Fashioned in an oversized tumbler looks lost. In a tall, narrow glass it looks wrong. In the right glass, compact and substantial in the hand, with a single large cube sitting correctly in the opening and the amber of the whiskey visible below it, it looks exactly like what it is: a drink made with care and precision.

The Drink Specific Rocks Tumbler was designed around that specific moment. The 83mm by 82mm near-square proportions are not a stylistic choice in isolation; they are the result of working backward from what a correctly made single-build Old Fashioned should look and feel like in the hand. Wide enough to take a large ice block. Low enough to feel settled rather than precarious. Heavy enough in the palm to communicate the seriousness of the drink.

Zane Harris's insight, which runs through the entire Drink Specific collection, is that ice has the greatest influence on glass design in cocktails because it appears in almost every drink and because its displacement of liquid creates the most common source of customer dissatisfaction. The Rocks Tumbler addresses this for the single-ice, single-build format: a glass where the large cube sits where it should, the liquid level reads as correct once it is there, and the oar line removes any ambiguity from the spirit measure before the ice goes in.

For operations that also serve double builds or more complex large-ice cocktails, the Double Rocks covers those occasions. The two glasses together cover the full short cocktail range from single neat serves through to double measure spirit-forward builds, from a single coherent design language within the Drink Specific collection.

Care & Use Instructions

Commercial Dishwasher Use: Certified for 1,500 commercial dishwasher cycles under EN 12875-1/2. The near-square dimensions make the Rocks Tumbler one of the most stable and easily racked glasses in the Drink Specific range. The 82mm diameter sits securely in standard commercial glass rack compartments. Use standard commercial cycles with professional-grade detergent. Remove promptly and allow to air dry. The oar section near the base can collect water; tip to drain after each cycle.

Build Sequence: For a built Old Fashioned: sugar and bitters first in the glass, then spirit to the oar mark (60ml), then one large ice block. The ice raises the liquid level to the correct appearance. For a Negroni: combine all three components (90ml total for equal-parts at 30ml each), pour into the glass, then add one large ice block and stir briefly to integrate. Garnish last, placed at the rim rather than dropped in, so the orange peel oils can be expressed over the surface of the drink.

Ice: The 82mm opening is calibrated for a 50mm large-format cube. Temper the glass with cold water before adding ice from a deep freezer to avoid thermal shock. Place the large cube gently rather than dropping it to protect both the glass and the ice clarity.

Handling: The compact near-square proportions make the Rocks Tumbler one of the easiest glasses to handle in service: low, wide, stable, and comfortable to carry either by hand or on a tray. The wide base sits securely on most bar and table surfaces.

Storage: The compact 83mm height makes the Rocks Tumbler the most space-efficient glass in the Drink Specific range for storage. Standard commercial glass racks accommodate multiple rows comfortably and the low profile means more rows per shelf height than any other Drink Specific shape.
