Cucumber and Apple Gin and Tonic Cocktail
Go beyond plain gin and tonics with this easy Cucumber and Apple Gin and Tonic Cocktail recipe that tastes like summer in a glass. Gin, peach schnapps and apple juice combine for a sweet drink that is perfect for any summer party.
Ingredients
- 16 slices cucumber (peel on), plus some peeled into ribbons
- 8 fresh mint sprigs, leaves only, plus extra sprigs to garnish
- 150 ml gin
- 50 ml peach schnapps
- 1 lime, juiced
- 800 ml apple juice, chilled
- 1 peach, sliced, to garnish
- Tonic water
- DRINK RESPONSIBLY!
Method
- Put the cucumber slices and mint leaves in large jug with a splash of the gin and muddle together with a cocktail muddler or the end of a rolling pin until the mint is thoroughly bruised and the cucumber has broken down.
- Stir in the remaining gin and the peach schnapps.
- Add the lime and apple juice, stir to combine, then strain into a 1.5 ltr bottle or pitcher.
- Refrigerate until chilled.
- Serve with few sprigs of mint, cucumber ribbons and peach slices to garnish.
Recipe Notes
- You can add Tonic Water (or Lemonade) for a bit of extra refreshing "fizz"
